Today is the start of week 2 of my personal challenge and admittedly, I am miserable. I am stressed and tired and craving everything under the moon, stars and sun. I feel like no matter how much I eat, I am still hungry. I have been on the verge of tears all day and I want to give up.
I know that all of this is likely the result of my body withdrawing from my normal plethora of carbs and juice on top of being extremely stressed out for personal reasons. It sucks. Im not giving up, but I am hoping that I start to feel better soon.
I spent this past weekend at home in Raleigh and was pretty happy with myself. Normally, I go to Cookout for my first lunch and have a chargrilled chicken sandwich topped with bacon and cheese, with a dozen hushpuppies and a Reese's Cup milkshake. I did ultimately get a Oreo/Heath milkshake. It was yummy and I have no regrets.
On Friday night I went to a retirement party for one of my high school teachers. They catered Smithfield's Chicken 'N Bar-B-Q. There was NC bbq, hush puppies, fried chicken, potato salad and coleslaw. I haven't had Smithfield's since 2007. I only had a couple of bites of bbq and bypassed my hushpuppies and fried chicken. I mourned that loss a bit. I did accidentally have a cup of sweet tea, forgetting that I wasn't supposed to have it until I finished the cup and put it down.
My mom and I went to breakfast and instead of opting for my normal pancakes, eggs and sausage, smothered in syrup and butter, I went with home fries, eggs and sausage with a little bit of ketchup and left plenty on the plate. I felt like my meal was incomplete without any bread so I had a hard time enjoying it completely.
Overall, compared to my normal eating on trips home, I am proud of myself for this trip. I had a couple of weak moments, but still am very proud of myself.

Breakfast - Eggs with tomato and spinach
This is one of my favorite things to make for breakfast. It is delicious and light and makes for easy meal prep. Also, how adorable are these little bakeware sets that I got from Tuesday Morning?! I am obsessed with stoneware and cast iron anything.
Lunch - Chicken and veggies
Normally I would roast these in the oven but because I got home from NC super late and my chicken was frozen, I threw everything into the crockpot. It came out delicious. The veggies are asparagus, brussel sprouts, mushrooms, peppers and onions.
Dinner - Greek salad with salmon
My trainer told me to eat my heaviest meal for lunch because I am most active during the day. So I threw together this light salad for dinner. If you're wondering why my piece of salmon is so small, it's because I don't like fish. I have learned to tolerate a small amount of salmon as long as I have some other strong flavors with it.
Carrots with hummus, Sargento snack packs and fresh fruit.
Exercise has not been good. I forgot to take my tennis shoes to NC and didn't go to the gym yesterday either.
I'm hoping that the week will get better and this all will get easier.
